I installed this wireless printer onto my new Mac pro which came with Mountain Lion and though it prints and scans there is no option to send a fax when I go into the system preferances.
I can print it out and fax it manually, so I know the fax is working.
Any idea how to enable the fax features?

I couldn't find anything on the HP Support page you supplied about setting up the fax on the mac. Just geneneral stuff about installing the latest driver which I have.
If I go into the Printer settings via system preferances ther eis an option to add a fax but the list is empty.
Did you try adding the printer again, but this time using the 6500 ppd that has ".Fax" at the end?

Reboot your Mac, enter Print & Scan and click the Plus sign.
Allow 20-30 seconds and the fax queue should appear
