We're heading to Thailand next week and considering purchasing a 15" Macbook Pro Retina whilst over there. The question is, I'm looking at getting 16GB RAM, would the Apple stores (in Phuket) have them in stock or would they have to be ordered in? If ordered, how long does that usually take?
Also, would the keyboards/everything be in Thai? Hope not haha.

the Worse is that there is no an official mac repair! Most of icare center here are unprofessional and try to get advantage $$ of the customers and apple too.
Apple has no retail stores in Thailand.

Nobody in these forums represents Apple or any store. The only way you can find out whether you can buy something is to contact a store directly yourself and ask.

In general, would you have to order the 16GB version from your local Apple store? Or do they have them in small numbers in stock anyway? That's the general question 🙂
Even in the US, the only way you could find out whether some Apple retail store or reseller normally had something in stock would be for you to call them directly yourself.
most shopping centres in Thailand have 'applesque' stores (they pretty much look like apple stores), you will not be able to buy a 16gb macbook pro retina. But they will likely sell you the macbook pro non-retina with a ram upgrade.
Paragon shopping centre has them available, but you will get a better price at the MBK accross the road

if its not for use in Thailand, i'd get it from Duty free at the airport when you go home. Ahh MBK shopping centre is in central Bangkok. You could likely just order the exact config you want and pick it up on your way home
Would they have the 16GB retina at Phuket airport? Apple online reckons it could ship in 2-3 days, maybe I could order it online and send it to my hotel, maybe.
16GB retina will not be available in any store, its a custom order.

Buying in Thailand works out $nzd1000 cheaper than buying here, which is a shame 😟
I suspected it was price related, visit the shopping mall in Phuket there will be a istore there. You will likely be able to pick up a 8GB retina there off the shelf, and maybe even be able to order a 16gb.
Keep your receipt and attempt to get a VAT refund at the airport on your way out
