Is there any way I can downgrade my phone and take the 6.0.1 update away

Nope, Apple/iTunes doesn't doesn't offer a way to downgrade. You would probably run into more problems than you had before attempting to downgrade, if you try.
Why do you want to downgrade, maybe someone here can help ya out?
