What are some examples of Web DAV servers? DropBox? Evernote?

If not, can I set one up in iCloud?

iPad 3G, iOS 5.1.1

http://dropdav.com/ is one I think.

The others you mention cannot do it.

Dropdav looks like it will work with DropBox.

My iOS apps all give the option of sharing via Web DAV server with no explaination of what it is or how one sets it up. Looks like it would be offered in iCloud.

Unfortunately not. For a long time Apple used to provide a webdav server called iDisk. When iCloud was set up to replace that, these server functions were deliberately omitted, and the countless people who used them to store and share documents, photos, websites, etc. had to move their stuff elsewhere.
