how can I open an empty file (Word, Excel, Texedit, ...) in a given folder that is already open on my desktop ?

I would like to open empty files (especially Office) directly in a sub-folder I am already working in, without searching and browsing the path in the "Save as ... " command. Does anybody knows how to do that ?

MacBook Air, Mac OS X (10.7.5)
