Since 90% if SPAM and Phishing pretends to be from a valid userid and host, but actually comes from some other site -- how does one display the REAL mail headers -- not the ones that the folks at iCloud 'believe' are mail headers.

Double click the mail entry to open in a new window. Click the gear at the top. Click 'show long headers'.
No such option exists.... the only options under Preferences/viewing are: "Load images in HTML messags"; "Show all folders at login"; and "Show message previews."
Worked for me.
Make sure you are double clicking the email in the Preview List. You'll know you did it right when you get the message opening up in it's own window.
Ah ah... that's the "gear!" ... I was only looking at the gear in the main iCloud Mail window... not on the message itself.
Sigh... really intuitive 😟
