If you are referring to an iMessage there is no way to do so other than turning off iMessage.
It is iMessage . I was able to go into settings then to Messages then to Send & Receive then under "start new conversation from:" deselect phone# and selected my Apple Id. Someone said only show my name now
It should show the email address that is your Apple ID.
