Running iTunes 10.7 on a Windows 7 PC: when I sync the iPhone device I am invited to upgrade to iOS 6.0.1, currently on 4.3.5 (8L1), but I don't want to go that far. I only want to go as far as the latest 5.x release (5.3, I believe).

You can't; iTunes will only offer the latest released version compatible with any given device.

I suspected this might be the case. Thanks for the helpful replies, even though it was not the answer I wanted to hear. I doubt if I will buy Apple again, as a reward for their arrogance.
