My iPod can be turned on/off, but otherwise it's frozen in the connect to iTunes screen. I've tried restoring it through iTunes, but it downloads the update then does nothing and my only option is to try and restore again. I've tried restoring it about four times, and I've also uninstalled and reinstalled iTunes and restarted my computer.

If you're unable to do a Restore, go into Recovery Mode per the instructions here.
I've done that. I can do the restoring process, but once the update is downloaded nothing happens.

Any error messages?
What does the status bar in iTunes say with it stops.
We need more information.
