iCloud doesn't store your music (other than music purchased from the iTunes store, which can be redownloaded for free if still available in the store). Your music should be stored in your iTunes library on your computer. Once there, you can uncheck the songs you want to remove from your phone, then sync to remove them. You can always sync them back by rechecking the songs and syncing again.

You can transfer music purchased from the iTunes store to your computer by opening iTunes and authorizing it for the Apple ID(s) used to purchase the music, then connecting your phone to your computer and in iTunes going to File>Devices>Transfer Purchases. If you have music on your phone that was not purchased from the iTuens store on your phone that you need to transfer to your iTunes library, you'll have to use 3rd party software to extract it from your phone, such as PhoneView (Mac only) or Touch Copy (PC or Mac). After extracting the music, you can then import it to iTunes.

If you still have your music on another computer that you had been syncing with, the best solution is to copy the entire iTunes folder (not just the music folder) from your old computer to your new one, as outlined here: http://support.apple.com/kb/HT4527.
