After you updated, it should have asked, unless you just updated from iOS 6 to 6.0.1. Contacts should be synced to a supported application on the computer, or iCloud. You would sync your contacts back from there in iTunes. Photos are designed to by imported, and should be on a regular basis since problems can occur with the phone and cause them to disappear.

I'm sorry, but you would have no one to blame but yourself for not importing them. To restore from a backup, connect the iPhone to the computer with iTunes running. Select the iPhone in the device pane on the left side. Right click and select restore from backup. It will ask you what backup, and you would use the latest one. Make sure, however, that you do not make a backup while there are no pictures in the camera roll, or the original backup will be erased.
