I am wondering if Itunes Match will take my current AAC versions ( I have changed ALL of my music to AAC ) and put them under my account. As of now they do not say that they are under any account. Under "Get info" it just says encoded with Itunes 7. So will it take the songs i have and put them under my account?

Did you put the tracks into iTunes? If so, then they should go to the cloud if you enable iTunes Match.
Yes they are all in Itunes. I was just wandering if it would be listed under my Apple ID whenever i enable itunes match. I am asking to make sure before i pay the $25.
I'm not sure what you mean by "under my account" but, in general, any music that is in your iTunes library, as long as it meets the requirements, will be eligible for matching or uploading. Most iTunes Store purchases will be automatically added to the cloud, and any tracks ripped from CD will then be scanned and either matched with tracks avaialble on the Store or uploaded.
