Not easily and not at all with iTunes I don't think. If you have a multitrack recording (not common with most music files) you can delete the vocal track. If it's mixed into the audio you can use tools which have a "Karaoke" mode to filter out frequencies in the vocal range. I seem to recall Audion has this but that won't run on newer computers (it will on my G4).
