Syncing Notes between iPod Touch and Mac without iCloud?

hi all, i was just wondering how i can sync my iPod Touch and Mac Notes. i can create notes on my iPod Touch and then access those on my Mac, but when i create notes on my Mac they don't get synced to my iPod Touch. why is this?

i was also wondering if it can be done without using iCloud. i just want to sync via the USB cable.

i'm running OSX Lion. would it help if i upgraded to Mountain Lion?
