Changing NTP Server

I want to change the NTP server my mac references...I have a linux box as a network interface and it is running as an NTP relay. Where can I change it? The Date and Time Pref panel only lets me select Apple servers

MDD dual, Mac OS X (10.4.6)

in the date and time preferences check the box 'Set date and time automatically' but then manually type in the ntp server ip or domain name, don't use the drop down menu.
