For whatever reason my nano and iPod classic won't sync to my newly matched 256k tracks. I don't know how this possible since those old files have been deleted. Any advice?

Did you delete the files from the HDD? If so, this is the reason. The files must be on the HDD to sync to iPods without internet access.
The new files are on my hard drive and the old ones are long gone. I deleted them from my iPod nano then added them back. It somehow added the old 128k files (which no longer exsist)
Do you have the option to down convert tracks being sync'd selected in iTunes?
Plug in the iPod, and select it. Looking at the summary page see if you have that option selected.
