I need a new laptop, but is it the case that there is not much gain to be expected when working with FCP7?

Sure there is. Depending on the age and speed of your PREVIOUS laptop. Faster processors makes the app work faster. Also, more RAM and an SSD drive help. I got the non-Retina model with 16GB RAM, HIgh Res matte display and 500GB SSD drive, and this is a MEAN machine.
Although I mainly used it for Avid.
I'd be moving from a dual core to a quad core, and i Understand that FCP7 only uses one core, so I'm concerned that ther might be no speed increase at all.
If you have Final Cut Pro 5.1, you are not going to find any speed improvement because the FCP 5.1 suite will not install under Mountain Lion (the OSX version installed in currently shipping Macs).
If you do not want to switch to either Final Cut X, Premiere CS6 or Avid, you'll need to find a used copy of FCS 2009 (aka FCS 3) which contains Final Cut Pro 7. Only it will install on ML.

Find a used laptop that runs either Snow Leopard or Lion. You will have to install Rosetta on Lion to get the PPC based FCP 5.1 installer to run

The OP has FCP7, the 5.1 is IOS for the ipod etc.

where the cores make a big difference is using compressor with qmaster implemented. It will address all cores and save you days compressing. I think there's some great explanations on qmaster at www.digitalrebellion.com

Actually, FCP does make use of all cores as OSX will do some load distribution at the system level. It just doesn't maximize that utilization until you set up enough virtual machines (using Compressor with Qmaster) to slam the system.
