How can I file a tax exemption off Apple purchaces from the Apple store? Is there an email I could use?

Try calling the 800 number on the Apple Store home page. 1 800 MY-APPLE
I presume you are referring to purchases from the iTunes Store, not the Apple Store (the Apple Store sells hardware). This may have changed since I last applied, but send a message to:
along with the details of the order for which you are applying for the refund and a copy of your sales tax exemption certificate.
