There are many possible reasons why, but with that amount of information it's impossible to say. So, how about you tell us somethings: version of iPhoto? Any error messages you get? What happens when you try? Anything at all that might throw some light on the situation

Boot into Safe Mode, Mac OS X: Starting up in Safe Mode, and create a PDF preview file of the book as described in this Apple document: iPhoto '11: Preview a book, card, or calendar before you order or print it. Check the PDF file for errors and if satisfied order your book from the Safe Mode.
Keep the pdf file to compare with the printed book when it arrives.

To export photos to a memory stick select the photo(s) in iPhoto and export (file menu ==> export) to a desktop folder, mount the unlocked memory stick and drag the folder to it
To order prints select the photo(s) and click on share ==> order prints
These, of course, are simply wild guesses since you tell us absolutely nothing about your system, versions. error messages or any other useful information to be sure that the solution fits your situation

I do get an error message when trying to export my photos to a memory stick as for red ring photos it stops just before completion and won't continue.

How many photos? Memory sticks formatted as FAT 32 or 64 have a limited number of files allowed in the root directory. You may have run up against that. Export to a folder on the Desktop and drag the folder to the stick as Larry has already suggested.
I tried that and it won't write to my desktop either with the same error message.
2gmemory stick 100 pics should be no problem
Run Disk Utility to repair disk permissions and verify the disk and reboot.
Next, if needed launch iPhoto with the Option key held down and create a new, test library. Import some photos and check to see if the same problem persists.
Select one of the photos and reveal in finder - waht do you see
