Most data is stored in track tags, except for .wav files which don't have tags. Dates added, modified, played & skipped, played & skipped counts, rating, playlist membership and references to store downloaded art are stored in the library database file iTunes Library.itl.
If you paste in your own art it should be stored in the tag. If you edit metadata it should be stored in the tag.
