I want to upgrade to a consumer or prosumer video camera that will EASILY allow me to edit with final cut express 4. Everything I see online says nothing works well with Final Cut express.

Cameras that will work:
DV, HDV, standard AVCHD.
Tape base cameras such as DV & HDV are becoming extinct.
Memory based cameras is where it's at.

I did run a search on the forum, but most of what I found is old. The video camera sales people I have spoken too say that when you import AVCHD playback skips a lot and it takes a ton of time to import and render.

That is untrue.
Standard AVCHD will import via the Log and Transfer feature. My system ingests an hour in around 10-15 minutes.
FCE will transcode to AIC (APPLE INTERMEDIATE CODEC).
You do have to set the correct Easy Setup to match the incoming footage.
Editing is smooth and no rendering of the clips is required when things are done correctly.
