Update vs. Restore

In iTune, when I clicked Device, I saw my iPhone iOS info, then two buttons: Update and Restore.

What is the difference between update iOS 6.0.1 (to install the latest iOS) and restore (to restore to the default factory and then install the latest iOS)? Is one safer to do than the other?

iPhone 4, iOS 4.3.3

Update is used when you want to upgrade iOS to the current version, which is now 6.0.1. Restore is what you do when you wish to Erase your device then restore iOS. You can restore anytime, but you can only update if there is something to which you can update. For example, you can update from 4.3.3 to 6.0.1. But once you have installed 6.0.1 you cannot Update because there is nothing new to which you can update. But you can Restore iOS 6.0.1. The same as reinstalling.
