the new podcast icon is suddenly missing off the home screen...my 2 year old was playing with the ipod, and I'm sure she is to blame 😝

Has the Podcast icon been drag-and-dropped into a folder? Use the Search function on your iPod to look for Podcasts, can you find it?
If not, then perhaps she has deleted it.
I did actually use the search and did not find the app, as well as look within a folder.
Ended up re-downloading it from the App Store, this is what resolved it for me.
Then your daughter must have deleted it.

I'd forgive her now if I were you. She'll only be even more bolshy as a teenager if you hold a grudge about it. 😀
