Hi! You can't change album artwork max height and width. you can jast change aspect ratio (!!!) of it by uploading another artwork:
right click -> get info -> last tab!
Actually, in the Artists and Genres views View > View Options... has a 5 step slider for artwork size, from small to much too small. 😉

You must be referring to the OS X version. The Windows 7 version of iTunes 11 only got the sorting options under View -> View Options...
That is only for the Artists and Genres
I am asking how to do it for the Album Section
This bothers the heck out of me to! I had it perfectly organized with Four albums across and it was very easy to view. Now I have Seven across and they are significantly smaller and require more focus to see. I like Itunes 11 otherwise just let me control the artwork size!
The slider for cover resize disappeared on the ALBUM view ( iTunes 11).
Apple simply killed the function, it seems.
This is terrible for all of us who have been carefully adding album covers.
Cover flow view also disappeared.

I tried, and the way you demonstraded seems to be the only way to visualize a cover in a large format.
I have imported 758 CDs in iTunes, each one with its cover on high resolution.
This process took literally years, and I just did it because iTunes provided a way to visualize the covers in a beautiful way -- keeping the album "concept" since its initial versions.
Now, at version 11, Apple simply kills the cover flow and album artwork resize.
This is not only an inconsistent interface decision, but also a disrespect with loyal users that have been trusting Apple digital music formats since its early days.
Indeed, itunes11 brings many bad surprises.
The fixed Album cover size is one.
The other one is that Straeming from iMac to AppleTV3rdGen stops when teh iMac goes to sleep
And lastly one cannt filter Music anymore by entering a search word in the search box up right, now it behaves a bit like spotlight.
Apple, please fix this !!!
Click the search magnifying glass and untick Search Entire Library.

I've also spent years sorting out album artwork, and the thing I liked most about Itunes was the coverflow. Not happy at all about this change.
I'm in the same boat. I have an extensive library of classical albums and had set the artwork size so that the complete album title appeared under it, but now I have eleven across leaving no room for complete (except the shortest) titles. Can't we have the slider bar back to adjust the size to personal preference. Another complaint I have is that the Composer view has been omitted. Where there were variants in composer names (i.e. Pyotr/Peter for Tchaikovsky and some with or without the Ilyich) I have made changes to make composer names consistent throughout my library. This enabled me, with Composer View, to view all works of a particular composer. This was an invaluable help since some albums have the works of two or more composers. So please, can we have Composer View back?
Hi there Mac-Pete - I'm glad you mentioned that about streaming from iMac to AppleTV, I've just spent nearly all afternoon trying to sort that problem out, jumping up and down to wake up the iMac so that it will re-connect with AppleTV. I decided in the end it must be a bug in iTunes 11 and your comment has proved me right. So come on Apple, get that sorted please as it makes the AppleTV a waste of space - and money. It would be hopeless trying to watch a feature film from iTunes, as it is now to listen to and enjoy a full length classical album.
