my itunes recognize the iphone perfectly, it just doesn't give me the options to sync itunes u / podcasts. the available tabs when i click on the device are summary / info / apps / music / movies / tv shows / photos / on this iphone. what should i do??

I'm having a similar issue with iTunes 11... but I do see Podcasts. Perhaps it's because I have a podcast subscribed in my laptop's iTunes library. I don't have any iTunes U courses (but I do on my phone).
Try getting a course or two from iTunes store and see if it shows up.

You must go to your prefences in Itunes and select Itunes U: Edit>Preferences>"check" Itunes U.
