Q: How do I switch to Airplane Mode during a system restore (to an old iCloud backup) when I can't access the settings?

My iCalendar events all disappeared today and I am trying to restore to an old iCloud backup from a few days ago.  My apple expert suggested that I switch to Airplane Mode during the restoration so that it would not try to sync to my blank iCloud calendar, but instead restore to my Nov 28 backup time.  However,as soon as the restore process begins (gray screen that says estimated time left) I cannot get back to Settings to switch it to Airplane Mode.
