I want upgrade my iMac to 16g. Can I use 2x8g instead of 4x4g?

Yes you can.
If you have four slots you can have any configuration of memory size you like. You will get the best performace wit matched pairs. eg 2x8, 4x4, etc.
Make sure you check the ram that came with the Mac and match the type and speed.
