I have set my logo png to 16:9 (the same setting as my imovie) but when I drag and drop it in and select picture in picture, it is still cutting off the top and bottom. Please help...it's driving me insane!

The PNG below was designed in Illustrator and exported as a png. I opened a new document and tried setting the New Document Settings as Web and Video & Movie with 72 ppi in RGB as this seems to give the best image quality. I then 'dragged and dropped' the .ai logo file into this document. That was originally designed at 300dpi CMYK.

way too much 'print'-jargon .... 😉
a) video has no ppi, dpi, etc - whatever dpi you add to your file, it has NO effect on the quality in video
b) video has a 'fix' resolution, 1280x720 or 1920x1080
c) the Preview.app doesn't show the pictures 'real' aspect ratio. and your iM screenshot indicates a square/1:1 picture.
d) video handles no vector-based = .ai graphics, only pixel-based.
I'm not familiar with AI, but it should be possible to create a 1920x1080 png from your sign (btw: nice drawing!)

I just copied my logo and pasted it into Photoshop as a new document with a transparent background. I used a much larger canvas/page size than I needed, but with the correct aspect ratio. Then, I used the crop tool, set to "Fixed Aspect Ratio," and cropped it down to what I wanted. You might end up with empty/transparent space. That's okay. The final step was to save it as a PNG file. It worked perfectly, and my logo looks great in iMovie.

Sadly I don't have Pixelmator, but I will definitely look into it.
Can what you say be done in Photoshop?
I'll try it by using your pixel measurements and see if that works. I'll do it in Photshop and keep it pixel based.

afaik, you should be allowed to open the .ai directly in PS; it will ask for a ppi/dpi to convert vector into pixel - as mentioned: no such thing, type 72 .... (10 or 1000 wouldn't make a difference). or, perhaps, there's a 'convert layer into pixel' command (such is for Text layers)? ....

to make the Print-Queen a Video-Princess:
dots-per-inch is a interpolated value in print; a HDef monitor offering 1080 has these 2457600 pixels - INDEPENDENTLY of monitor size (=inch). so, the tiny 10" car display of the huge 60" suite plasma - all same resolution. therefor no ratio pixel vs length .... video only asks for real pixels. whatever size.-
no need to purchase Pixelmator - it's the poor man's Photoshop (on Black Friday it was a 14$ offer) .... 😁

Before my Pixel Aspect Ratio was set to square pixels so I played about so it matches my movie and hey presto! It works...Something just clicked in my head from your previous messages and I think I've grasped the concept!
