In my AppStore on the iPodTouch there is no icon for 'purchased' (iOS4)...

If you are on iOS 4.3.3+ then if you go into the Updates tab at the bottom of the App Store app, then you should have a Purchased link at the top of the updates screen.
If you are not on iOS 4.3.3+ then you won't get the Purchased link as it didn't exist in older iOS versions - you will either need to use your computer's iTunes (if it's version 10.3+) to re-download them and sync them over, or on your iPod you will need to search through the store for the apps that you have previously bought and re-download them from there.
