In Snow Leopard, Preview open all images actual size. In Mountain Lion, vertical images (and all images larger than the screen) fit to the screen and I have to use the keyboard command to see actual size. What happened, and is there any way to fix this?

Open a PDF in Preview. Now, right-click on the toolbar and select Customize Toolbar ...
Drag the circled items from the customize panel to your toolbar and release there.
Click the middle button in the Zoom panel. The Scale will report 100%.
Your future Preview documents will open at 100% now.
Ummm, that's not true. Unless you have some magic touch that is causing your computer to behave that way... Preview seems to open all documents, ie. PDFs at 100%, but any image opened in preview opens at a scale that allows the whole image to be seen. And as far as that Image setting, the default settings on my mac already have that pixel setting for 100% scale, but the PDF setting is Size on screen is size on printout which still opens all PDFs at 100%. So not sure where you are getting all that....
Yes, this is why I was asking. Nothing that I've read seems to change the fact that Preview now opens large images to fit the screen, but there is no way to change that so that the default is to open at actual size. In Snow Leopard, actual size seemed to be the default, but Mountaiin Lion appears to have gotten rid of the option to do that. If anyone knows of a way to change a setting via Terminal, please tell us. I have seen this topic come up a lot, and for some, it seems as though they can set actual size once, and it remembers. Not for me. Sigh,
Yes, that setting controls how PDFs render when they are 100%, but no matter how you set it, it does not affect image files, which continue to open to fit the screen, again no matter how you change the preferences for either images or PDFs.
I believe that there is a setting somewhere inside the OS that determines this for Preview, but it is not a user preference. It should be.
But if it can be accessed with Terminal, please, please, please tell us how.
Also, I find that the following preference setting will give 100% image size on open. The same is also set for PDF.
In the new preview there is a setting in Preview/Preferences/pDF tab: the first setting for Define 100% scale.
