Can the default language in pages be changed?

Can the default language in pages be changed?

Can the default language in pages be changed to British English? I'm guessing not easily if at all. Seems like a basic thing to want to do.

MacBook Pro, Mac OS X (10.7.3)

Pages uses the same language as your device or computer. If you're using a Mac, open System Preferences > Language and Text and select English as your language

In language & text/language, use the Edit button to add British English and put it at the top of the list and restart.
