How do I apply parental controls on the ipod touch?

Settings > General > Restrictions. Turn on only those items you want to be available. Then set the passcode. Do not lose it. You will not be able to make any changes in restrictions without the passcode. Lose it and you will have to restore the iPod to factory settings to add or remove any restrictions.
