Why can't I watch tv episodes on my iPad?

Watch them where ? If they are tv shows that you've bought and downloaded from the store then they should show and play in the Videos app. If you mean shows on tv companies websites then a lot of sites use flash which isn't supported on the iPad, but a number of TV channels have their own apps in the app store which allow you to watch their programmes.
