That is the username that is registered in the GameCenter app. The banner will appear when you start an app that supports GameCenter. Go to GameCenter to change the user or username.
How do I go to game center?
It is a preinstalled system app. Look through you apps. If you cannot find it do a search on the iPhone for GameCenter (right swipe from the first homescreen page).

This might have been how you used to achieve the desired result, however now after IOS 7 i believe, you have to go to the settings app, scroll down to game center tab, then down to your game center profile. Sign in and you can change your "Nickname". I still am looking for a solution to changing your actual name that displays when a friend request is sent. My son has an account that shows my wife's name but his nickname. I signed into his apple ID and fixed his name there but on game center it still shows up as her name. Not sure how to fix this yet.
