Anyone have an idea on this. When I create a note in the notes app, the note will auto-delete itself and the app will then show no notes. I've tried power cycling and a hard reset (using the power+home button) but that had no effect. iPhone 4S with 6.0.1

What account are you using? Launch the Notes App and tap the top left button until you're on the Accounts page. If you're using your email and you delete the email in the Email App it will also remove it from the Notes App. Select the On This iPhone account and see if the issue continues

I don't have notes backing up to anything. This is all I see when launching the app
That's a bit strange,
First reset the app. Double-click the home button and in the multitasking menu tap and hold the Notes app until it wiggles then tap the minus symbol that appears. Retry the app. If that fails to work restart the device by holding the Sleep/Wake button and Home button at the same time for ten seconds until the Apple logo appears
Thanks for the suggestion Malignance, but unfortunately neither resetting the app not a hard reset (wake + home) of the phone is addressing the problem.
I watched the video and I can't replicate it on my 4S or my wife's 4S. Both save notes as they should. You did the restart and reset next is to Restore the device with iTunes. Be sure to do a backup first
