Uncheck sync photos and then sync the iPod.

More details, please, because when I sync I don't see an option on what to sync. It automatically starts sync'ing photos (which I don't want to sync and don't even want on my iPod), and it gets stuck there (maybe something with photo cache that I can't find/figure out), so it never makes it to my music.

Try deleting the iPod Photo Cache folder. Note there may be more than one. See:

iTunes: Understanding the iPod Photo Cache folder

Do you have a Photo tab in iTunes?

To delete synced photos and videos

    1. In iTunes, select the device icon in the Devices list on the left. Click the Photos tab in the resulting window.
    2. Choose "Sync photos from."
      • On a Mac, choose iPhoto or Aperture from the pop-up menu.
      • On a Windows PC, choose Photoshop Album or Photoshop Elements from the pop-up menu.
    3. Choose "Selected albums" and deselect the albums or collections you want to delete.
    4. Click Apply.

Turn off autosyncing so that you have to overtly start a sync. To turn off go iTunes>Preferences>Devices and check the box that says "Prevent iPods...".

    Try

    iTunes: Unable to sync photos

You mean you do not have the Photos tab as shown here:

    http://ncsa-ipads.wikispaces.com/iTunes+Photo+Tab

Have you successfully synced media from this iTunes library before?

When I go to my Programs list and choose iTunes, the only dropdown under that is "About iTunes" and "iTunes" with no other lists or options, and when I select "iTunes" it immediately takes me to my library. I do not have a photo tab as shown in the link you provided. iTunes only shows my music (by album, song, artist, etc.)

The strange thing is that when I go to My Computer, the iPod isn't being seen/listed, yet every time I start iTunes the iPod lights up and says it's sync'ing, then after a while I get the error message about a missing file. I know there are "problem" pictures in my iPod that used to "confuse" the sync process, but it ultimately would sync, after I'd tell it to ignore all those. I suspect that could be part of the problem now, although there are plenty of people (for years, I see) reporting the missing file message.

Thanks for your effort to help me.

Adding on to my comment few minutes ago: Here's something even stranger - This whole thing started because there were some albums and single songs that had just disappeared from my iPod, so I went to iTunes and the albums were gone from there too. The song was there under "Track 01," so I renamed the song and manually put the CDs back in the computer to import them. Magically I know see that all 3 items are on my iPod, although supposedly the sync had not worked. My lesser problem (getting the music to the iPod) is resolved, but I dread starting this process again when I buy a couple of songs that I plan to buy. I'll buy via my iPod because that's where I want them, but the next time I need to sync...trouble ahead! I'd like to get this all resolved. I think removing the pictures from the iPod will be a good first start, assuming I can find a way to do that.

    Again, thanks for your help.

It might also help to know that when I go to Devices and Printers on my computer it lists my iPod as a camera ?! But nowhere does it see it as something I need to eject/have approval to remove.

iTunes is not seeing your iPod:

    See

iOS: Device not recognized in iTunes for Windows

    - I would start with

Removing and Reinstalling iTunes, QuickTime, and other software components for Windows XP

    or

Removing and reinstalling iTunes and other software components for Windows Vista, Windows 7, or Windows 8

However, after your remove the Apple software components also remove the iCloud Control Panel via Windows Programs and Features app in the Window Control Panel. Then reinstall all the Apple software components

    - Then do the other actions of:

iOS: Device not recognized in iTunes for Windows

paying special attention to item #5

    - New cable and different USB port

    - Run this and see if the results help with determine the cause
