with OS X and internet searches tell me that there is a speech recognition button on my preferences tab HOWEVER all I can see is dictation ... any ideas anyone

What version of Mac OS X are you using?
If you are running Mac OS 10.8 (Mountain Lion) You will see dictation & speech in system preferences
yep checked that but it just talks of dictation not speech recog ?
Dictation is "more or less" speech recondition. To access it simply press the "fn" key twice and you will see the little microphone then simply start talking:
