I'm in the US from the UK. My data is completely tell turned off as is 3G. I'm on wifi but my phone has sent a message as a text. I was under the impression that I couldn't even send a text over wifi. iMessage refuses to work, too.

you would need cellular data to send/receive text SMS message.
Imessage you can send/receive on wifi or cellular data
if imessage is unavailable it will send it as a text. http://support.apple.com/kb/HT3529
either the person you or the person your sending it to, is out of a coverage area wifi or 3G.
PS the person I sent the message to is in the UK but is also on iPhone with the latest OS.
I thought that was the case. I'm ever so puzzled as to why my messages are green and not blue.
Forgot to add. iMessage worked fine on my network in the UK 8 hours ago.
He was at home using his wifi. I'm even more confused now.

Yes your number should be greyed out.
It magically started to work. I'm still really confused as to how I managed to text over wifi
