1st Gen Touch, notes won't sync

8GB 1st gen touch running 3.1.3, G5 iMac OS 10.6.8, Mac Mail, POP mail account.

I'm creating notes in Mail, I select to sync notes in iTunes with the iPod attached but no notes turn up on the iPod.

How do I do it? note that I hate IMAP with a vengeance and not sure if this facility is enough to make me change. It's just easier and quicker to type on the Mac for shopping lists etc than doing it on the Touch so doing it on the Mac then syncing would be favourite. Otherwise it's pen and paper which seems silly given this facility.

Syncing Notes

You can set up iTunes to automatically sync your notes with email applications such as Mac OS X Mail (requires Mac OS X version 10.5.7 or later) or Microsoft Outlook 2003 or 2007 on a PC. See “Syncing with iTunes” on page 9.

Page 9 says:

Contacts, calendars, notes, and webpage bookmarks are synced with applications on your computer, as described in the following section. Contacts and calendars are synced both ways between your computer and iPod touch. New entries or changes you make on iPod touch are synced to your computer, and vice versa. Notes and webpage bookmarks are also synced both ways. Photos and videos (Mac only) can be synced from an application or from a folder.
