You can start using it immediately. It comes with approximately 2/3 charge.

Charging times: Fast charge in about 2 hours (80% capacity), full charge in about 4 hours
As the battery becomes more charged, the charge rate slows down so it might take several hours to get to 100%. I wouldn't worry about it. Use it until it shuts down automatically (six to eight hours) and then plug it into the charger and take a break.

For proper reporting of the battery’s state of charge, be sure to go through at least one charge cycle per month (charging the battery to 100% and then completely running it down).
Elsewhere, Apple elaborates and explains that two half-discharges (or four quarter-discharges, etc.) equals one full discharge.

So, could I charge it to maybe 70%, and then stop charging it, and about an hour later, plug it back in to charge for 2 hours at the fast pace? Or does it automatically stop fast charging whenever it reaches 80%?

Thank you. I will be using it at least 4 hours each month, and for the first couple months, probably 10-12 hours AT LEAST. I will use it quite often during the summer, too.
