MP4 file is video file. If your MP4 video was purchased from iTunes store, it will have DRM protection, you cannot convert it to audio MP3. If your video has no DRM, there are many online apps can do the file conversion for you, such as zamzar, Acethinker Video Converter, mediaconverter, etc. They are totally free, and you don't have to download or install anything. Take Acethinker as sample, here are the steps.
MP4 is video. You cannot convert video to an audio only format. What are you trying to achieve?
You can convert mp4 files to audio. Simply enter Quick Time player and go File>Export>Slect Audio Only. It should become mp3 files.

So I'm being exact. You cannot "convert" a video file (with audio), to audio only.
You can extract the audio, or record the audio into an audio programme etc. as a way of obtaining the audio only. But convert... no.
I answered the question. I also asked the OP to give further information, so that we could possibly provide a suitable solution. After all, as lllaass has suggested, perhaps the OP wants to make a ringtone.

I've got iTunes 11.0.3 and couldn't find an option in Quick Time to export the audio from some mp4 files I'd like to listen to without the video. Any suggestions?

Crazy! This lead to the trick. I just had to hold "option" while selecting "create new file" under the file tab. A little different from what's out there but it worked! THANKS
