How to get into Setup Assistant?

I bought a iphone 4S and it was set up at the Apple Store. When I wwnt home I backed up my old iphone 4 into iCloud. On my new phone, may I know how I can get back to Setup Assistant to restore the old phone's backup from my iCloud into the new phone? Thanks!
