You likely can't. The 2G iPod can ony go to iOS 4.2.1

Hi, I have just bought an Ipod on ebay and advertised as 3rd Generation, I have also discovered that this is a 2nd Generation, the info I have researched follows:-

Only the third-generation or fourth-generation iPod touch can run iOS 5. My guess is that you have a second-generation model for which iOS 4.2.1 is the last version available. You can confirm the model you have here: http://support.apple.com/kb/HT1353 Regards.

Buyers beware make sure you get the right model number or you will not be able to download most of the new games apps. as these need 4.3.1. and later software which can not be done ona 2nd Generation.
