backup and restore 4S

I have an unlocked Iphone 4S purchased in Apple Store in the US. I used in Dubai with DU and then used it with ATT in the US. I am back in Dubai but ATT locked my phone. Now they unlocked so I can use it in but they are telling me to back-up and restore it. How do I do back-up and restore it without losing my data?
