You can, but if you are syncing media from the computer to the iDevice, the next time that device syncs it will erase that content from the device.
Also, the only way to play content in iTunes is if the media is physically present on the computer.
Save yourself some hassle, purchase an external drive (or a larger hard drive) and move the content to that drive.

icloud just grabs the music from all of your authorized devices and plays them from wherever they are, they are truly not physically held in the iCloud? Do I understand that correctly? So it is best if we DON'T delete the music from our hard drives?

The content is accessible for redownload from the cloud. That being said, any attempt to play or sync the content to a device requires the content to be physically on the computer.
