I want to start learning Xcode,
but im wondering if "Beginning IOS 5 Development" is outdated? Should I wait for "Beginning IOS 6" comes out?

My personal advice: don't wait, there is enough to learn with IOS 5. Otherwise, you will never start.
Ideally, you want the source of instruction to be teaching IOS 5 (or 6) development skills while using Xcode 4.2 or later as the IDE platform. Make sure you have the relevant development libraries and documentation downloaded from Xcode preferences.
iOS 6 is already out. You can still develop for iOS 5, but your apps will be outdated. Also, Beginning iOS 5 Development is for current iOS programmers looking to upgrade their skills to iOS 5.

Just so you know, "Beginning iOS 6 Development" is out! Well, almost. You can buy the digital "alpha book" right now, which contains almost everything, and then you'll automatically get the final digital version within the next week.
