Ios5 update of iPad 1

Now I'm not technically minded so keep it simple. Since updating to ios 5 on my iPad (1) I've lost the 'new page' icon on safari and now have tabs instead. I hate tabs. For various reasons I liked the visual aspect of all the pages being laid out. How can I go back to the original?
