The Apple website seems to indicate 8GB for my 2.0 GHz Core i7. However when I search other Apple compatible memory sites they indicate 16GB. Has anyone upgraded memory for this?

16 GB works just fine.
According to apple, 8gb, that worked fine for my mid 2011 Mac Mini. Although the 2012 model can take 16gb.
Apple frequently under rates the RAM because of production costs for larger (8 GB) RAM modules.
I have been running with 16 gig in my 2011 Mini Server for
around 9 months now with no problem whatsoever.
