My Notes app is set not to sync, but a quick check of my Gmail account shows that it's emailing everything anyway. Do not want! How do I make sure my notes actually stay privately on the iPad where they belong?

Open the settings app > Mail,Contacts,Calendars > [select the gmail account] > Turn notes Off > tap Done.

It looks like that worked; but it also deleted all my notes, which is less good.
That is likely because those notes were on the Google account and not local.
I don't think so. The notes in question were created locally on my iPad, back before I upgraded to iOS 6. The versions I recovered from Google were actually a few days out of date.
No biggie; just a warning for anyone else who changes that setting!
