I have an apple and AOL mail account. When I share a page in Safari via email it defaults to sending out via my AOL address. How do I switch it so it goes out under my Apple email address?

I'm not positive, but I believe this procedure should solve that. Go to Mail>Preferences>Composing>in the Composing window go down to the line that reads "Send New Messages From", and at the right end of that line click on the drop down box arrow. In the resulting drop down list select your AOL Email Address that you want the emails in Safari sent from.
